Peanut Butter Protein Balls

Simple Gnocchi with Red Sauce
Great little sweet treat with a boost of protein.
INGREDIENTS:
3/4 CUP ALL-NATURAL PEANUT BUTTER (I use crunchy)
1/3 CUP VANILLA PROTEIN POWDER (I use Gut Renew Brand, it’s the best tasting and full of so many good things)
1/2 CUP OLD FASHIONED ROLLED OATS
1/4 CUP GROUND FLAXSEED MEAL
2 TBSP HONEY
WATER AS NEEDED
*I use all organic ingredients

DIRECTIONS:
  1. Add all ingredients except the water to a mixing bowl.
  2. Mix all ingredients with rubber spatula and then add water as needed to make your dough (amount of water varies depending on protein powder you use and how drippy your peanut butter is)
  3. Line a tray with parchment paper and scoop ball of dough onto tray (you should get approximately 12 balls)
  4. Place in fridge for an hour before eating.
  5. Place in an airtight container and store in fridge.

Simple Gnocchi with Red Sauce

Simple Gnocchi with Red Sauce
This was a hit with my guys.
INGREDIENTS:
16OZ GNOCCHI (I used the Sienna Arte brand from Italy)
24OZ RAO'S HOMEMADE TOMATO BASIL SAUCE
8OZ TILLAMOOK FARMSTYLE MOZZARELLA SHREDDED CHEESE
1/4CUP GRATED PARMESAN CHEESE
3OZ DICED PEPPERONI

​​​DIRECTIONS:
  1. Preheat oven to 425 degrees
  2. Bring 2 quarts of water to boil
  3. Spray 8x12 baking dish with cooking spray (I use olive oil in a spray mister)
  4. Boil your Gnocchi for approximately 4 minutes. When it rises to the top it's done
  5. Drain Gnocchi
  6. Mix Gnocchi, Tomato Sauce, half of the Mozzarella Cheese, Parmesan Cheese and Pepperoni together then spread evenly in baking dish
  7. Sprinkle other half of cheese evenly over top
  8. Bake for approximately 10 minutes until mixture is boiling and cheese is lightly browned.

Serve with salad and garlic bread or breadsticks.

Quick and Easy Stovetop Chili

Quick and Easy Stovetop Chili
Sometimes you want a quick and easy bowl of homemade chili. This is it!
INGREDIENTS:
1 TBSP EXTRA VIRGIN OLIVE OIL
1 MEDIUM YELLOW ONION, FINELY CHOPPED
1 JALAPENO, SEEDED AND FINELY CHOPPED
1LB GROUND TURKEY (use ground beef if you prefer)
1TBSP CHILI POWDER
1 TBSP OREGANO
1/2 TBSP SALT
1 TSP GROUND CUMIN
1 TSP GARLIC POWDER
1/2 TSP CAYENNE PEPPER
BLACK PEPPER
​8OZ CAN TOMATO SAUCE
16OZ WATER
15OZ CAN FIRE ROASTED TOMATOES
15OZ CAN BLACK BEANS, DRAINED AND RINSED
15OZ CAN KIDNEY BEANS, DRAINED AND RINSED
2 TSP CHICKEN OR BEEF BOUILLON

Shredded cheese for topping. 
Also great to top with sour cream.
​​​DIRECTIONS:
  1. Heat oil on medium high heat in large pot
  2. Add onion and jalapeno, cook until the onions are translucent
  3. Add ground turkey, cook until browned 
  4. Add seasonings (chili powder, oregano, salt, cumin, garlic powder, cayenne pepper, black pepper)
  5. Stir in tomato sauce, water, tomatoes, black beans and kidney beans
  6. Bring to a boil, stir in bouillon
  7. Reduce heat and simmer for 45 minutes

Serve with saltine crackers or cornbread muffins (Jiffy mini cornbread muffins shown in picture, made according to package, but stir in 2 TBSP of honey to the mix.)

Spicy Thai Chicken and Noodles with Peanut Sauce

Spicy Thai Chicken and Noodles with Peanut Sauce
This recipe has been adapted over the years. I tend to use ingredients I have on hand and measure with the heart.
​Please feel free to adjust to meet your personal needs. 
INGREDIENTS:
2 CUPS DICED COOKED CHICKEN BREAST (I use rotisserie)
1 PACKAGE OF THIN SPAGHETTI NOODLES (I use Barilla Gluten Free)
1 CUP SHREDDED CARROTS
1 CUP SHREDDED PURPLE CABBAGE
3 GREEN ONIONS CHOPPED
1 HANDFUL OF CILANTRO CHOPPED (If you don't like cilantro use fresh parsley)

Dressing;
2/3 CUP CREAMY PEANUT BUTTER (I use all natural)
1/2 CUP RICE WINE VINEGAR
6 TBSP EXTRA VIRGIN OLIVE OIL
4 TBSP LIQUID AMINOS OR SOY SAUCE (I use aminos to keep it gluten free)
2 TBSP HONEY
3 TBSP SRIRACHA
1/2 TSP GROUND GINGER
1/2 TSP GARLIC SALT
1/2 TSP CAYENNE PEPPER

Optional, crushed peanuts to top with
Spicy Thai Noodles Ingredients
​​​DIRECTIONS:
  1. Cook pasta noodles until al dente, then rinse with cold water and drain well
  2. Mix all ingredients for the dressing
  3. Toss pasta noodles with chicken, carrots, cabbage, onions and cilantro
  4. Pour dressing over pasta noodle mixture and toss together until all ingredients are combined
  5. Place in refrigerator overnight
  6. Serve with a sprinkling of crushed peanuts if desired
